INGREDIENTS

4 Italian sausages ( hot or sweet) cut into 1/2 inch pieces

4 red bell peppers, quartered lengthwise

4 banana peppers, quartered lengthwise

4 jalapeno peppers, quartered lengthwise (optional)

4-6 yellow fleshed potatoes, cut in half lengthwise and thinly sliced into wedges

½ a cup of extra virgin olive oil or corn oil

4 plum tomatoes, diced

1 tsp of oregano flakes

salt to taste

1 large onion, chopped

1 stalk of celery, diced

2 zucchini, cut in half lengthwise and thinly sliced into half-moons

2 garlic cloves, minced

2 Tbsp of extra virgin olive oil

4 cups of chicken broth

4 oz. of white mushrooms, sliced

4 oz. of oyster mushrooms, finely chopped

2 cups of Arborio rice or short- grain white rice

1/2 cup of Gran Padano or Parmesan cheese, grated

2 Tbsp of soft butter
